Barilla® Ditalini with Zucchini & Ricotta Cheese

Ingredients for 8 people

  • 1 box Barilla® Ditalini
  • 2 cups zucchini
  • 3/4 cup ricotta cheese
  • ¼ cup onion
  • ¼ cup grated Parmigiano-Reggiano cheese
  • Extra virgin olive oil
  • Salt and pepper

    Heat a tablespoon of olive oil in a pan over medium heat and add the onion

    When the onion has softened and browned, add zucchini, salt and pepper and cover
  3. 3
    After about 15 minutes, uncover and cook zucchini, allowing any water produced by the vegetable to evaporate
  4. 4
    In the meantime, cook the pasta in lightly salted boiling water for the amount of time indicated on the package
  5. 5
    Drain the pasta and toss with the zucchini and ricotta, crumbled with the tines of a fork, mixing well
  6. 6
    Sprinkle with the grated Parmigiano-Reggiano cheese and serve hot
