Large Shells Pasta Salad
with Cucumber Mint Yogurt, Cucumbers & Feta Cheese
Ingredients for 8 people
- 1 box Barilla® Large Shells
- 1 cup feta cheese, crumbled
- 1 pint yellow cherry tomatoes, halved
- 1 pint red cherry tomatoes, halved
- 3 cups English cucumber, diced
- 2 cups low-fat Greek yogurt
- 1 clove of garlic, minced
- Grated zest of 1 lemon
- 2 tablespoons lemon juice
- 1 tablespoon mint, chopped
- Sea salt and black pepper to taste
1Cook pasta according to package directions, drain and cool by rinsing with cold water.
2Once pasta is drained and cool, place in a large bowl and fold in the rest of the ingredients.
