Ingredients

Ingredients for 8 people

  • 1 box Barilla® Large Shells
  • 1 cup feta cheese, crumbled
  • 1 pint yellow cherry tomatoes, halved
  • 1 pint red cherry tomatoes, halved
  • 3 cups English cucumber, diced
  • 2 cups low-fat Greek yogurt
  • 1 clove of garlic, minced
  • Grated zest of 1 lemon
  • 2 tablespoons lemon juice
  • 1 tablespoon mint, chopped
  • Sea salt and black pepper to taste
  • 1 teaspoon of Extra Virgin Olive Oil

Instructions

  • Cook pasta according to package directions, drain and place on a sheet tray and toss with olive oil to cool
  • Once pasta is drained and cool, place in a large bowl and fold in the rest of the ingredients.
