Barilla® Mezzi Rigatoni

Ingredients for 4 people       

  • 1/2 BOX Barilla® Mezzi Rigatoni
  • 1 TEASPOON Extra Virgin Olive Oil Divided
  • 2 OUNCES Fresh Spinach
  • 3 OUNCES Ricotta Cheese
  • 2 TABLESPOONS Parmigiano-Reggiano Cheese Divided
  • 1 PACKAGE Small Paper Liner

    BRING a large pot of water to a full boil

    Add salt to taste
  3. 3
    ADD pasta and cook according to package directions
  4. 4
    Drain well and place pasta on a large sheet pan
  5. 5
    DRIZZLE with a little olive oil to taste and let cool
  6. 6
    Ricotta and Spinach Filling: SAUTÉ spinach in 1 teaspoon olive oil over medium heat
  7. 7
    Cool, drain and chop fine
  8. 8
    GRATE 2 tablespoons Parmigiano cheese
  9. 9
    ADD spinach to the ricotta cheese and mix until blended
  10. 10
    ADD Parmigiano cheese and mix well
  11. 11
    FILL each Mezzi Rigatoni with filling using a pastry bag
  12. 12
    PLACE each Rigatoni in a miniature paper liner
  13. 13
    GARNISH with Parmigiano cheese shavings
