Ingredients for 4 people       

  • 1/2 BOX Barilla® Mezzi Rigatoni
  • 1 TEASPOON Extra Virgin Olive Oil Divided
  • 2 OUNCES Fresh Spinach
  • 3 OUNCES Ricotta Cheese
  • 2 TABLESPOONS Parmigiano-Reggiano Cheese Divided
  • 1 PACKAGE Small Paper Liner

Instructions

  • BRING a large pot of water to a full boil
  • Add salt to taste
  • ADD pasta and cook according to package directions
  • Drain well and place pasta on a large sheet pan
  • DRIZZLE with a little olive oil to taste and let cool
  • Ricotta and Spinach Filling: SAUTÉ spinach in 1 teaspoon olive oil over medium heat
  • Cool, drain and chop fine
  • GRATE 2 tablespoons Parmigiano cheese
  • ADD spinach to the ricotta cheese and mix until blended
  • ADD Parmigiano cheese and mix well
  • FILL each Mezzi Rigatoni with filling using a pastry bag
  • PLACE each Rigatoni in a miniature paper liner
  • GARNISH with Parmigiano cheese shavings
