Ingredients for 4 people
- 1/2 BOX Barilla® Mezzi Rigatoni
- 1 TEASPOON Extra Virgin Olive Oil Divided
- 2 OUNCES Fresh Spinach
- 3 OUNCES Ricotta Cheese
- 2 TABLESPOONS Parmigiano-Reggiano Cheese Divided
- 1 PACKAGE Small Paper Liner

Instructions
- BRING a large pot of water to a full boil
- Add salt to taste
- ADD pasta and cook according to package directions
- Drain well and place pasta on a large sheet pan
- DRIZZLE with a little olive oil to taste and let cool
- Ricotta and Spinach Filling: SAUTÉ spinach in 1 teaspoon olive oil over medium heat
- Cool, drain and chop fine
- GRATE 2 tablespoons Parmigiano cheese
- ADD spinach to the ricotta cheese and mix until blended
- ADD Parmigiano cheese and mix well
- FILL each Mezzi Rigatoni with filling using a pastry bag
- PLACE each Rigatoni in a miniature paper liner
