- 1 BOX Barilla Mini Wheels
- 4 TABLESPOONS Extra Virgin Olive Oil Divided
- 1 Fresh Lemon
- 2 CUPS Frozen Peas
- 1 POUND Boneless Skinless Chicken Breast Diced
- 5 SLICES Bacon Cut Into Strips
- 2 CUPS Cherry Tomatoes Halved
- 1 CUP Fresh Mozzarella Cheese Cubed (May Substitute Shredded Mozzarella Cheese)

Instructions
- BRING a large pot of water to a boil
- COOK Mini Wheels for 6 minutes; drain and drizzle with 2 tablespoons of oil
- SPREAD pasta on a cookie sheet or baking tray to cool
- JUICE lemon to yield 2 tablespoons lemon juice
- BRING a medium pot of salted water to a boil
- ADD peas and boil for 5 minutes; drain and cool
- HEAT a medium skillet over medium heat
- ADD remaining oil and chicken
- COOK for 4-5 minutes or until cooked through; season with salt and pepper
- ALLOW chicken to cool
- COOK bacon in same skillet until crispy; drain fat and allow to cool
- COMBINE all ingredients and allow to rest 30 minutes before serving
