Ingredients for 6 people       

  • 1 BOX Barilla Mini Wheels
  • 4 TABLESPOONS Extra Virgin Olive Oil Divided
  • 1 Fresh Lemon
  • 2 CUPS Frozen Peas
  • 1 POUND Boneless Skinless Chicken Breast Diced
  • 5 SLICES Bacon Cut Into Strips
  • 2 CUPS Cherry Tomatoes Halved
  • 1 CUP Fresh Mozzarella Cheese Cubed (May Substitute Shredded Mozzarella Cheese)

Instructions

    BRING a large pot of water to a boil

    COOK Mini Wheels for 6 minutes; drain and drizzle with 2 tablespoons of oil

    Spread pasta on a cookie sheet or baking tray to cool
  4. 4
    JUICE lemon to yield 2 tablespoons lemon juice
  5. 5
    BRING a medium pot of salted water to a boil
  6. 6
    ADD peas and boil for 5 minutes; drain and cool
  7. 7
    HEAT a medium skillet over medium heat
  8. 8
    Add remaining oil and chicken
  9. 9
    Cook for 4-5 minutes or until cooked through; season with salt and pepper

    Allow chicken to cool

    COOK bacon in same skillet until crispy; drain fat and allow to cool

    COMBINE all ingredients and allow to rest 30 minutes before serving
