Ingredients for 4 people       

  • 1 box BARILLA Rigatoni
  • 6 tablespoons extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • Salt and fresh ground pepper to taste
  • 4 cups packed mixed lettuce pre-washed
  • ½ cup sundried tomato
  • 5 oz Blue cheese crumbled
  • 1 cup walnuts roasted and crushed

Instructions

    COMBINE oil and vinegar using a bowl

    ADD salt and pepper to taste
  3. 3
    COOK Barilla Rigatoni following the instructions on the box
  4. 4
    DRAIN and toss with 1 tablespoon olive oil; place on sheet tray to cool down
  5. 5
    COMBINE the lettuce leaves with the pasta, the tomatoes and the dressing, using a large bowl
  6. 6
    SPRINKLE with the cheese and roasted nuts
  7. 7
     SERVE immediately
