Barilla® Rotini Salad

with Artichokes, Black Olives, Capers, Roasted Peppers & Parmigiano

Ingredients

Ingredients for 8 people      

  • 1 Box Barilla Rotini
  • 4 tbsp Olive oil
  • 1 14oz pkg quartered Frozen Artichokes
  • ½ cup chopped Black Olives
  • 2 tbsp chopped Capers
  • 1 ea diced Roasted red bell pepper
  • 1 ea diced Roasted Yellow bell pepper
  • 2 tbsp chopped Oregano
  • ½ cup shredded Parmigiano cheese

Instructions

    In a large skillet cook artichokes in 1 tbsp olive oil until lightly brown in color
  2. 2
    Remove from heat to cool
  3. 3
    Bring a large pot of water to a boil
  4. 4
    Season water with salt and cook pasta 1 minute under required cooking time
  5. 5
    Drain and toss with 1 tbsp olive oil, place on sheet tray to cool down
  6. 6
    Once cool, place in a large bowl and add all remaining ingredients
  7. 7
    Toss to combine
