Ingredients for 6 people

  • 1 box Barilla® Blue Box Spaghetti
  • 5 tablespoons extra virgin olive oil
  • 2 garlic cloves, chopped
  • 2 jars roasted peppers, sliced thin
  • 1 bag baby spinach
  • Salt and black pepper to taste
  • ½ cup Pecorino cheese, shredded
  • ½ cup pine nuts, toasted

  • Bring a large pot of water to a boil
  • Meanwhile in a large skillet sauté garlic in olive oil for 1-2 minutes, then add peppers and turn the heat to high
  • Sauté for 3-4 minutes then season with salt and pepper
  • Cook pasta according to package directions
  • Drain and toss the pasta with the roasted peppers and spinach
  • Remove the skillet from the heat and fold in half the cheese
  • Top with remaining cheese and pine nuts
