with Fresh Spinach, Pancetta & Barilla® Marinara Sauce
Ingredients for 8 people
- 1 box Barilla® Ziti
- 1 jar Barilla® Marinara Sauce
- 1 tablespoon extra virgin olive oil
- 1 cup pancetta, sliced
- 1 clove garlic, chopped
- 1 cup onion, small diced
- 1 6oz-bag fresh spinach
- 1/4 cup white wine
- 1/2 cup Parmigiano-Reggiano cheese, grated
- Salt and pepper to taste
1Bring a large pot of water to a boil, meanwhile in a 12 inch skillet add olive oil and pancetta then cook for 2-3 minutes or until the pancetta has rendered out a bit.
2Add the onions and cook for 3-4 minutes until they are opaque.
3Add the garlic and sauté for 1 minute then add the spinach and sauté an additional minute. De-glaze with white wine then season with salt and pepper to taste.
4Add the sauce and bring to a simmer.
5Cook the pasta 1 minute less than required cooking time, reserve ½ cup of the cooking water.
6Drain and combine the pasta with the sauce and cooking water.
7Remove the skillet from the heat and fold in the cheese.
