  • 1 box Barilla® Collezione Bucatini
  • 5 egg yolks
  • 1/3 cup Romano cheese grated
  • 1/3 cup Parmigiano-Reggiano cheese grated
  • 6 ounces bacon julienne
  • 1 bag baby spinach
  • Salt and black pepper to taste

Instructions

  • Bring a large pot of water to a boil
  • Cook pasta according to package directions
  • Meanwhile mix egg yolks with cheese, salt and pepper
  • In a skillet sauté bacon until crispy
  • Remove from skillet then add spinach to the same pan and wilt for 1-2 minutes
  • Drain pasta and stir in the bacon, spinach and egg yolk mixture, be careful not to overcook
  • Serve immediately
