Barilla® Collezione Bucatini con Pancetta E Piselli

Ingredients for 6 people

  • 1 box Barilla® Collezione Bucatini
  • 4 tablespoons extra virgin olive oil
  • 4 ounces Pancetta sliced thin and rendered
  • 2 cups fresh peas shelled
  • ½ cup Pecorino Romano cheese grated
  • Salt and black pepper to taste

    Bring a large pot of water to a boil

    Meanwhile in a large skillet sauté pancetta in olive oil for 2-3 minutes until crispy
  3. 3
    Add peas and sauté for 2 minutes; season with salt and pepper
  4. 4
    Cook pasta 1 minute less than package directions
  5. 5
    Drain pasta reserving 1 cup of pasta cooking water, set aside
  6. 6
    Add pasta to the pea sauce then add the cooking water and bring the sauce to a simmer
  7. 7
    Let most of the water reduce then remove the skillet from the heat
  8. 8
    Fold in cheese until the sauce is creamy and well incorporated with the pasta
