Barilla® Collezione Orecchiette with Ricotta Salata & Fresh Tomatoes



Ingredients for 6 people

  • 1 box Barilla® Collezione Orecchiette
  • 1 pint yellow cherry tomatoes quartered
  • 2 pints red cherry tomatoes quartered
  • sea salt and black pepper to taste
  • 6 tablespoons extra virgin olive oil
  • 1 clove garlic minced
  • 10 basil leaves cut julienne
  • ¾ cup ricotta salata cheese shredded

    Bring a large pot of water to boil

    In a large bowl, add tomatoes, salt, pepper, olive oil, garlic and basil
  3. 3
    Let marinate ½ hour
  4. 4
    Meanwhile cook pasta according to package directions
  5. 5
    Drain pasta and toss into tomato mixture
  6. 6
    Finish with cheese on top and serve
