Barilla® Gluten Free Rotini

with Sautéed Summer Vegetables



Ingredients for 6 people      

  • 1 box Barilla® Gluten Free Rotini
  • ½ red onion diced
  • 5 tablespoons extra virgin olive oil
  • 1 zucchini diced
  • 10 fava bean pods cleaned and peeled
  • 1 pint grape tomatoes washed
  • 1 yellow bell pepper roasted and diced
  • ½ cup Parmigiano-Reggiano cheese grated (optional)
  • 6 leaves basil torn
  • salt and black pepper to taste

    Bring a large pot of water to a boil, season with salt
  2. 2
    Sauté onion in olive oil until translucent in a large skillet over medium heat, about five minutes
  3. 3
    Add zucchini, fava beans, grape tomatoes and yellow pepper, sauté for three minutes over high heat
  4. 4
    Cook pasta according to package directions
  5. 5
    Drain pasta and toss it with veggies in a large mixing bowl
  6. 6
    Add cheese (optional) and basil before serving
