Ingredients for 6 people     

  • 1 box Barilla® Gluten Free Spaghetti
  • 2 cloves garlic chopped and divided
  • 5 tablespoons extra virgin olive oil divided
  • 1 pound medium-sized shrimp peeled and deveined
  • 1 pound ripe plum tomatoes blanched, peeled and diced
  • ½ cup gluten free bread crumbs
  • 1 tablespoon fresh Italian parsley chopped
  • salt and black pepper to taste

  • Bring a large pot of water to a boil, season with salt
  • Sauté garlic with 4 tablespoons of olive oil in a large skillet over medium heat
  • Add shrimp and tomatoes, sauté over high heat for 2 minutes or until shrimp are cooked
  • Season with salt and black pepper
  • Combine bread crumbs, remaining olive oil, and parsley in the same skillet, cook until golden and crunchy over medium heat
  • Cook pasta according to package directions
  • Darin pasta and toss it with the shrimp sauce in a large mixing bowl
  • Top with crunchy bread crumbs before serving
