Barilla Chickpea Casarecce

With Tomatoes, Fresh Basil and Parmigiano Reggiano

Ingredients

Ingredients for 4 people
  • 1 Box Barilla® Chickpea Casarecce
  • 3 tbs Extra Virgin Olive oil
  • 1 cup Plum Tomatoes, small diced
  • 1 tbs Red Wine Vinegar
  • 1 Garlic clove, chopped
  • 1 bunch of Fresh Basil
  • Fresh Thyme
  • Salt and pepper to taste
  • 1/2 cup shaved Parmigiano Reggiano cheese

Instructions

    Bring a large pot of water to a boil and cook the pasta according to the directions
  2. 2
    Meanwhile, in a large bowl combine the tomatoes, oil, vinegar, garlic, basil and thyme then season with salt and black pepper
  3. 3
    Drain the Casarecce and combine with the tomatoes
  4. 4
    Finish with cheese and more olive oil if desired
