Serves 4 people
• 1 box Barilla® Red Lentil Rotini(https://www.barilla.com/en-us/products/pasta/legume/red-lentil-rotini)
• 8 oz. Monkfish, cut in pieces
• 3/4 cup Cauliflowers
• 1/4 cup Black Pitted Olives
• 4 oz. Fava Beans
• 1 Garlic clove
• 2 tbsp Extra Virgin Olive Oil
• Thyme
Instructions
- Deep the fava beans in boiling water for 1 inch, cool down in cold water and peel. In the same water blanche the cauliflowers sprouts
- Drain and set aside
- Heat a pan with the olive oil and a garlic clove
- Sauté the monkfish, add the cauliflowers, the pitted olives and the fava beans
- Cook the Rotini according to package directions
- Drain and sauté in the pan with the ingredients, adding a little of the cooking water, olive oil and some mint leaves
- Sauté, add herbs and pepper. Serve
