Ingredients:

  • 1 box Barilla® Protein+® Farfalle pasta
  • 1 jar Barilla® Rustic Basil Pesto
  • 2 tablespoons extra virgin olive oil
  • 1 clove garlic
  • 2 yellow squash, diced
  • 2 zucchini, diced
  • 6 leaves basil, julienne,
  • 1 1/3 cups bocconcini (small) mozzarella cheese balls, halved
  • 1/2 lemon juiced
  • Salt and black pepper to taste

Instructions

  • Bring a large pot of water to a boil. Cook pasta for one-minute less than package directions.

  • Meanwhile in a skillet sauté garlic and olive oil over medium heat for one minute, add zucchini and yellow squash and blister for two minutes. 

  • Let pasta cool, then combine the squash, zucchini, basil, pesto and cheese in a large bowl, season with salt and pepper.

  • Serve immediately or chill for future use.
