Ingredients for Spicy Vegan Vodka Pasta:

  • 1 box Barilla® Protein+® Farfalle pasta
  • 4 tablespoons extra virgin olive oil
  • ½ cup yellow onion, small dice
  • 2 cloves garlic, minced
  • ½ cup tomato paste
  • 1 teaspoon crushed red pepper
  • ¼ cup Vodka
  • 2 cups coconut milk
  • 10 leaves basil, sliced thin
  • Sea salt and black pepper to taste

Instructions

  • Cook pasta according to package directions. 

  • Meanwhile, in a skillet over medium heat add olive oil, onion, garlic, and crushed red pepper.

  • Cook 2-3 min. then add tomato paste cooking an additional 2-3 min. Add vodka and evaporate by half. 

  • Add cream and pasta, toss, and top with basil.
