Ingredients for Protein+ Penne Chicken Pasta with Asparagus and Parmigiano Cheese:

  • 1 box Barilla® Protein+® Penne Pasta
  • 3 tablespoons extra virgin olive oil, divided
  • 1 pound chicken thighs, diced
  • 1 teaspoon cumin 
  • 2 cloves garlic, minced
  • 1 yellow onion, small dice
  • 1 cup asparagus, sliced on the bias
  • 2 chipotle peppers, diced
  • 1 tablespoon chipotle sauce, canned
  • ½ cup Parmigiano-Reggiano cheese, grated
  • 1 cup heavy cream
  • Sea salt and black pepper to taste

  • Bring a large pot of water to a boil. Cook pasta according to package directions. 
  • Meanwhile, season chicken thighs with 1 tablespoon olive oil, cumin, salt, and pepper. 
  • Cook thighs for 3-4 minutes in a skillet on high heat. Remove chicken and set aside. 

  • Add remaining olive oil to the skillet with onion and garlic. Sauté for 2-3 minutes or until translucent. 

  • Add asparagus, cooking for an additional 30 seconds. Add chipotle peppers, sauce, and heavy cream.

  • Return chicken to skillet with pasta. Toss with cheese.
