Barilla® ProteinPLUS® Angel Hair with Bay Scallops, Shrimp & Arugula



Ingredients for 7 people      
  • 1 box Barilla® ProteinPLUS® Angel Hair
  • 1/3 cup extra virgin olive oil
  • 2 Cloves garlic Minced
  • 1/3 Fresh Lemon
  • ½ cup White Wine
  • 1 cup Vegetable Stock (May Substitute Fish Stock)
  • ½ pound Bay Scallops
  • ½ pound Shrimp
  • 1/3 cup Sun Dried tomato
  • 8 ounces Arugula chopped Stems Removed
  • ½ cup Parmigiano-Reggiano cheese grated
  • salt to taste
  • black pepper freshly ground to taste

    Bring a large pot of water to a boil

    Zest lemon to yield 1 teaspoon lemon zest
  3. 3
    Heat olive oil in a large skillet
  4. 4
    Add garlic; sauté until golden
  5. 5
    Add wine and stock
  6. 6
    Simmer until half evaporates
  7. 7
    Add sun-dried tomatoes, shrimp and bay scallops

    Simmer gently until shellfish is firm and cooked through

    Stir in lemon zest and arugula

    Season with salt and pepper; remove from heat

    Cook Angel Hair according to package directions

    Add pasta to sauce; mix well

    Add cheese and mix again
