- 1 box Barilla® Protein+™ Farfalle
- 3 tablespoons Extra Virgin Olive Oil
- 1/2 Onion, Chopped
- 1 Zucchini, Diced
- 2 Tomatoes, Diced
- 1 cup Ricotta Cheese
- 2 tablespoons Fresh Parsley, Chopped
- 1/2 cup Vegetable Broth

Instructions
- Bring a large pot of water to a boil
- Heat olive oil in a large skillet over medium heat. Add onions and sauté for 3 minutes
- Add zucchini and sauté for 2 minutes
- Add tomatoes and sauté for 1 minute. Season mixture with salt and pepper
- Cook pasta according to package directions
- Add cheese and 1 ladle (standard ladle is 4oz or use 1/2 cup) of the pasta cooking water to the vegetable mixture
- Drain pasta and toss with the sauce in the skillet. Sprinkle with fresh parsley
