Barilla® ProteinPLUS® Farfalle

with a Garden Vegetable & Ricotta Cheese Sauce

Ingredients for 7 people
  • 1 box Barilla® ProteinPLUS® Farfalle 
  • 3 tablespoons Extra Virgin Olive Oil 
  • 1/2 Onion, Chopped 
  • 1 Zucchini, Diced 
  • 2 Tomatoes, Diced 
  • 1 cup Ricotta Cheese 
  • 2 tablespoons Fresh Parsley, Chopped 
  • 1/2 cup Vegetable Broth

    Bring a large pot of water to a boil

    Heat olive oil in a large skillet over medium heat. Add onions and sauté for 3 minutes

    Add zucchini and sauté for 2 minutes
  4. 4
    Add tomatoes and sauté for 1 minute. Season mixture with salt and pepper

    Cook pasta according to package directions

    Add cheese and 1 ladle (standard ladle is 4oz or use 1/2 cup) of the pasta cooking water to the vegetable mixture

    Drain pasta and toss with the sauce in the skillet. Sprinkle with fresh parsley
