Ingredients for 7 people      
  • 1 box Barilla® Protein+™ Farfalle
  • 4 tablespoons extra virgin olive oil
  • 1 clove garlic chopped
  • 1 teaspoon fresh oregano chopped
  • 1 butternut squash diced into large pieces
  • 2 zucchini sliced into half moons
  • to taste salt
  • to taste black pepper
  • 1/3 cup Pecorino cheese grated

  • Bring a large pot of water to a boil
  • In a large skillet, sauté garlic and oregano in olive oil for 1-2 minutes
  • Add butternut squash and sauté for 8-10 minutes
  • Add zucchini and sauté for 2 minutes
  • Season with salt and pepper
  • Cook pasta 1 minute less than package directions; reserve 1 cup of the cooking water
  • Add 1 cup of cooking water to the sauce and bring to a simmer
  • Add cooked pasta to the sauce and cook for 1 minute
  • The sauce should become creamy
  • Remove from heat and toss with cheese
