- 1 box Barilla® Protein+™ Spaghetti
- 1/3 cup Extra Virgin Olive Oil
- 1 clove Garlic
- 2 Medium Eggplants Diced
- ¼ cup Flour
- ½ cup Kalamata Pitted Olive Halved
- 2 pints Cherry Tomatoes Halved
- ½ cup Pecorino Cheese Grated
- 6 leaves Fresh Basil Sliced Very Thin

Sprinkle eggplant with salt in colander

Set aside to drain for 1 hour
- Bring a large pot of water to a boil

Heat olive oil in a large skillet

Press the garlic clove with the flat of a knife
- Add to skillet and sauté for 1 minute

Sprinkle eggplants with flour
- Add to skillet and cook until tender
- Stir in tomatoes and olives
- Cook 2 more minutes
- Cook pasta according to package directions
- Drain

Combine pasta with sauce and mix well

Add cheese and basil
