Ingredients

Ingredients for 7 people
  • 1 box Barilla® ProteinPLUS® Spaghetti
  • 1/3 cup Extra Virgin Olive Oil
  • 1 clove Garlic
  • 2 Medium Eggplants Diced
  • ¼ cup Flour
  • ½ cup Kalamata Pitted Olive Halved
  • 2 pints Cherry Tomatoes Halved
  • ½ cup Pecorino Cheese Grated
  • 6 leaves Fresh Basil Sliced Very Thin

Instructions

    Sprinkle eggplant with salt in colander

    Set aside to drain for 1 hour
  3. 3
    Bring a large pot of water to a boil
  4. 4
    Heat olive oil in a large skillet
  5. 5
    Press the garlic clove with the flat of a knife
  6. 6
    Add to skillet and sauté for 1 minute

    Sprinkle eggplants with flour
  8. 8
    Add to skillet and cook until tender
  9. 9
    Stir in tomatoes and olives

    Cook 2 more minutes

    Cook pasta according to package directions

    Drain

    Combine pasta with sauce and mix well

    Add cheese and basil
