Ingredients

Ingredients for 7 people
  • 1 box Barilla® ProteinPLUS® Spaghetti
  • 1/3 cup Extra Virgin Olive Oil
  • 1 clove Garlic
  • 2 Medium Eggplants Diced
  • ¼ cup Flour
  • ½ cup Kalamata Pitted Olive Halved
  • 2 pints Cherry Tomatoes Halved
  • ½ cup Pecorino Cheese Grated
  • 6 leaves Fresh Basil Sliced Very Thin

Instructions

  • Sprinkle eggplant with salt in colander
  • Set aside to drain for 1 hour
  • Bring a large pot of water to a boil
  • Heat olive oil in a large skillet
  • Press the garlic clove with the flat of a knife
  • Add to skillet and sauté for 1 minute
  • Sprinkle eggplants with flour
  • Add to skillet and cook until tender
  • Stir in tomatoes and olives
  • Cook 2 more minutes
  • Cook pasta according to package directions
  • Drain
  • Combine pasta with sauce and mix well
  • Add cheese and basil
