Ingredients 7 Servings

  • 1 box Barilla® ProteinPLUS® Rotini
  • 2 cups plum tomatoes, diced
  • 1/4 cup Parmesan cheese, grated
  • Pesto sauce
  • Salt and black pepper to taste

Pesto Sauce:

  • 1/2 cup pine nuts
  • 1 cup parsley
  • 1  cup fresh basil
  • 1/2 cup extra virgin olive oil
  • 1 clove garlic
  • 1/2 cup Parmesan cheese, grated
    Combine all ingredients in a food processor while slowly adding olive oil.

Instructions

  • Bring a large pot of water to a boil. Cook pasta according to package directions. Drain pasta.
  • In a large bowl, toss pasta with tomatoes and pesto sauce. Season with salt and pepper.
  • Top with cheese, serve and enjoy!
