Ingredients 7 Servings
- 1 box Barilla® ProteinPLUS® Rotini
- 2 cups plum tomatoes, diced
- 1/4 cup Parmesan cheese, grated
- Pesto sauce
- Salt and black pepper to taste
- 1/2 cup pine nuts
- 1 cup parsley
- 1 cup fresh basil
- 1/2 cup extra virgin olive oil
- 1 clove garlic
- 1/2 cup Parmesan cheese, grated
Combine all ingredients in a food processor while slowly adding olive oil.
- Bring a large pot of water to a boil. Cook pasta according to package directions. Drain pasta.
- In a large bowl, toss pasta with tomatoes and pesto sauce. Season with salt and pepper.
- Top with cheese, serve and enjoy!
