Ingredients for 2 people

  • 1 pouch Barilla® Ready Pasta Gemelli
  • 2 tablespoons extra virgin olive oil 
  • 1 cup small or medium shrimp, peeled and deveined 
  • ½  cup zucchini, halved and sliced 
  • ½  cup yellow squash, halved and sliced
  • 2 cups grape tomatoes, halved 
  • ¼ cup parmesan cheese, grated 
  • Salt and pepper, to taste

Instructions

  • In a large skillet, heat the olive oil over medium-high heat, then add the shrimp, zucchini, and yellow squash. Sauté for 1-2 minutes.
  • Add the tomatoes and season with salt and pepper, to taste. Cook for one additional minute.
  • Tear corner of Ready Pasta pouch to vent, heat in microwave for 60 seconds.
  • Combine Ready Pasta with the shrimp and veggies. Top with cheese, if desired. Serve and enjoy!
