Weeknight Gemelli with Shrimp & Veggies

Ingredients for 2 people
- 1 pouch Barilla® Ready Pasta Gemelli
- 2 tablespoons extra virgin olive oil
- 1 cup small or medium shrimp, peeled and deveined
- ½ cup zucchini, halved and sliced
- ½ cup yellow squash, halved and sliced
- 2 cups grape tomatoes, halved
- ¼ cup parmesan cheese, grated
- Salt and pepper, to taste
1In a large skillet, heat the olive oil over medium-high heat, then add the shrimp, zucchini, and yellow squash. Sauté for 1-2 minutes.
2Add the tomatoes and season with salt and pepper, to taste. Cook for one additional minute.
3Tear corner of Ready Pasta pouch to vent, heat in microwave for 60 seconds.
4Combine Ready Pasta with the shrimp and veggies. Top with cheese, if desired. Serve and enjoy!
