This pasta salad recipe comes together quickly in under thirty minutes. Creamy Basil pesto is spooned over al dente penne pasta and tossed with fresh lemon zest, juicy cherry tomatoes, and cracked black pepper.

Ingredients for Creamy Penne Pasta Salad with Burrata Cheese:

  • 1 box Barilla® Penne pasta
  • 1 jar Barilla® Creamy Genovese Pesto 
  • 1 tablespoon extra virgin olive oil
  • 1 lemon, juiced and ½ tablespoon grated lemon peel reserved
  • 2 pints multicolor cherry tomatoes, halved
  • 2 packages Burrata cheese [12 oz. total], coarsely chopped
  • Sea salt and black pepper to taste

  • Cook pasta 1 minute less than package directions, drain, and toss with olive oil, set aside flat on a sheet tray to cool. 
  • Toss pasta with pesto, lemon juice, lemon zest, cherry tomatoes, and black pepper.
  • Top each individual portion with coarsely chopped cheese before serving.
