- 1 pound Zucchini, diced
- 4 tablespoons Extra Virgin Olive Oil
- 1 cup water
- 1/2 cup Parmigiano cheese, grated

Instructions
- Bring a large pot of water to a boil; add salt to taste
- Once water is boiling, cook the pasta according to directions
- Meanwhile, sauté zucchini in olive oil for 3-4 minutes
- Add sauce and water, and season with salt and pepper; bring to a simmer
- Drain pasta and toss with sauce
- Top with cheese before serving
