This recipe uses a halved baguette – we recommend choosing a good crusty Italian or French baguette. Drizzle olive oil on the bread and toast. Top your baguette with freshly sliced tomatoes, arugula, mozzarella, a schmear of Barilla Rustic Basil Pesto, and a drizzle of balsamic vinaigrette.

Ingredients for Pesto Caprese Sandwich:

  • 1 jar Barilla® Rustic Basil Pesto 
  • 1 baguette, halved
  • 2 tablespoons extra virgin olive oil
  • 3 heirloom tomatoes, sliced thin
  • 1½ cups arugula
  • 2 cups fresh Mozzarella (one 8-oz ball)
  • 1 tablespoon balsamic glaze

  • Preheat oven to 425° F. Drizzle baguette with olive oil and place in the oven to toast for 4-5 min.
  • Spread pesto on top and bottom of baguette. Arrange the bottom of baguette with tomatoes, arugula, mozzarella, and a drizzle of balsamic glaze. Cover with top of baguette. Cut into four equal sandwiches.
