Burrata and Pesto Toast



Ingredients for 6 people

  • 6 ½-inch slices of rustic Italian bread
  • 1 tablespoons olive oil
  • 3 tbsp Barilla® Basil Pesto
  • 1 cup Burrata
  • Freshly grated lemon zest from ½ of a lemon
  • ½ Cup Thinly sliced Cucumber
  • ½ Cup halved multicolor cherry tomatoes
  • Coarse sea salt to taste
  • 8 basil leaves; sliced thin

    Brush the bread slices with olive oil. Place on a baking sheet and under the broiler for about a minute on each side or until very lightly browned. Remove from oven and let cool slightly

    Combine the ricotta with lemon zest
  3. 3
    Spread ricotta over bread slices
  4. 4
    Top pesto then cucumbers and cherry tomatoes. Season with salt to taste and garnish with fresh basil
