Ingredients for 6 people
- 3 tbsp Barilla® Rustic Basil Pesto
- 6 ½-inch slices of rustic Italian bread
- 1 tablespoons olive oil
- 1 cup Burrata
- Freshly grated lemon zest from ½ of a lemon
- ½ Cup Thinly sliced Cucumber
- ½ Cup halved multicolor cherry tomatoes
- Coarse sea salt to taste
- 8 basil leaves; sliced thin

Instructions
- Brush the bread slices with olive oil. Place on a baking sheet and under the broiler for about a minute on each side or until very lightly browned. Remove from oven and let cool slightly
- Combine the ricotta with lemon zest
- Spread ricotta over bread slices
- Top with pesto then cucumbers and cherry tomatoes. Season with salt to taste and garnish with fresh basil
