Ingredients:

  • 1        jar Barilla® Sun-Dried Tomato Pesto
  • 10      Barilla® Wavy Lasagne sheets, cooked al dente
  • 1        cup frozen spinach, thawed and dried
  • 1½     cups ricotta cheese
  • ½       cup parmesan cheese, grated
  • 1        egg
  • ¼       cup mozzarella cheese, shredded
  • Basil, diced, for garnish

Instructions

  • Preheat oven to 350° F. Cut each cooked lasagne sheet widthwise and again lengthwise to create small strips.

  • In a large mixing bowl, stir together ½-jar pesto, spinach, ricotta, parmesan and egg. Combine well and spread mixture onto each lasagne sheet evenly.

  • Roll each lasagne sheet up and place in a rimmed baking sheet (seam side down). Top each roll-up with mozzarella cheese.

  • Bake for 15-20 minutes.

  • Serve alongside remaining pesto as a dipping sauce. Enjoy!
