with Charred Cauliflower, Green Onions, Hazelnuts and Basil

Ingredients for 6 people

  • 1 box Barilla® Veggie Spaghetti
  • 4 tablespoon Extra virgin olive oil
  • 2 Garlic cloves, whole
  • 4 cups Cauliflower
  • 1 bunch Green onions ½ inch slice
  • ½ cup Hazelnuts
  • ¾ cup Thinly sliced basil
  • Salt and pepper to taste

  • Bring a large pot of water to a boil
  • Meanwhile in a large skillet heat the olive oil over medium high heat then add the cauliflower and sauté for 3-4 minutes or until its well browned
  • Lower the heat to medium low and add the garlic and green onion, and season with salt and pepper to taste
  • Cook the pasta according to the directions, but drain 1 minutes less than required time while also reserving ½ cup of the cooking liquid
  • Combine the pasta with the cauliflower and cooking water and bring to a simmer
  • Remove the skillet from the heat and toss with ½ the hazelnuts and basil then garnish with remaining ingredients. If you wish you can add some Parmigiano cheese at the end
