Barilla® White Fiber Rotini

with Shrimp & Arugula

Ingredients for 6 people

  • 1 box Barilla® White Fiber Rotini
  • 3 tablespoons extra virgin olive oil
  • 1 cup arugula
  • 1 clove garlic
  • 1 tablespoon pine nuts
  • 1 tablespoon Parmigiano-Reggiano cheese - grated
  • 6 leaves fresh basil
  • Salt and black pepper to taste
  • 1 pound medium size shrimp
  • 2 cups green beans cut 1/2 inch

    Bring a large pot of water to a boil

    Meanwhile, in a blender PROCESS pine nuts, garlic, and cheese
  3. 3
    Add arugula and basil; blend well
  4. 4
    Drizzle in 2 tablespoons olive oil with a few ice cubes and process until creamy

    Cook pasta according to package directions

    Meanwhile, add beans to the boiling water with the pasta
  7. 7
    In a skillet, heat remaining olive oil, and sear shrimp on both sides
  8. 8
    DRAIN pasta, making sure to reserve 1/2 cup of pasta cooking water

    Add drained pasta, beans and 1/2 cup cooking water to the skillet with the shrimp
  10. 10
    REMOVE from the heat and fold in the pesto
