Barilla® White Fiber Rotini

with Grape Tomatoes, Leeks & Green Beans



Ingredients for 6 people

  • 1 box Barilla® White Fiber Rotini
  • 4 tablespoons extra virgin olive oil
  • 1 leek, diced small
  • 1 pint grape tomatoes, halved
  • 2 cups green beans, cut ½ inch long
  • ½ cup Romano cheese, shredded
  • Salt & black pepper to taste

    Bring a large pot of water to a boil
  2. 2
    Sauté leeks with olive oil over high heat. When slightly caramelized, add tomatoes
  3. 3
    Season with salt & pepper and sauté for 2 additional minutes
  4. 4
    Meanwhile, cook pasta according to package directions. With 4 minutes remaining, add the green beans to the water
  5. 5
    Drain pasta & green beans and toss with sauce
  6. 6
    Top with cheese before serving
