Ingredients for 6 people
- 1 box Barilla® White Fiber Rotini
- 1 jar Barilla® Marinara Sauce
- 3 tablespoons extra virgin olive oil, divided
- 1 medium onion, chopped
- 1 pound ground beef
- 1 cup water
- ½ cup low-fat mayonnaise
- 2 tablespoons mustard
- ¾ cup bread and butter pickles, diced
- 2 Roma tomatoes, diced
- 2 cups sharp cheddar cheese, shredded salt and pepper to taste
1Bring a large pot of water to a boil and preheat oven to 375° F.
2Cook pasta according to package directions – but remove it from the heat and drain it half-way through. Toss with 1 tablespoon olive oil and place on a tray to cool down.
3In a large skillet, cook onions in one tablespoon of olive oil over medium heat for about 10 minutes and remove them from the skillet.
4Add the remaining olive oil and ground beef to the skillet and sauté for 5-6 minutes or until lightly browned and cooked through. Season with salt and pepper to taste.
5Add the marinara sauce and water to the ground beef. Bring to a simmer and fold in the pasta. Transfer to a 9" x 9” baking dish and top with a layer of mayonnaise, dollops of mustard, pickles, tomatoes, onions and spread the cheddar cheese over the top.
6Cover with foil and bake for 25 minutes. Remove the foil and brown the cheese for 5 minutes.
