Ingredients

Ingredients for 8 people

  • 1 box Barilla Whole Grain Spaghetti
  • 4 tablespoons Extra Virgin Olive Oil
  • 1 clove Garlic chopped
  • 1 jar Roasted Red Peppers, sliced thin
  • 3 Zucchini sliced half moon
  • Salt and Pepper to taste
  • 1 tablespoon Parsley, chopped
  • 1/2 cup Pecorino cheese, grated

Instructions

  • Bring a large pot of water to a boil
  • Meanwhile in a skillet sauté garlic in olive oil for 1 - 2 minutes or until lightly golden in color
  • Add zucchini and sauté over medium heat 4 - 5 minutes
  • Add peppers and sauté an additional minute then season with salt and pepper
  • Cook Spaghetti according to package directions, once pasta is almost cooked reserve 1/2 cup of the cooking water
  • Add the cooking water to the sauce and bring to a simmer
  • Drain the pasta and sauté with the sauce for 1 minute or until well incorporated
