Barilla® Whole Grain Spaghetti

with Roasted Red Peppers, Zucchini & Pecorino Cheese



Ingredients for 8 people

  • 1 box Barilla Whole Grain Spaghetti
  • 4 tablespoons Extra Virgin Olive Oil
  • 1 clove Garlic chopped
  • 1 jar Roasted Red Peppers, sliced thin
  • 3 Zucchini sliced half moon
  • Salt and Pepper to taste
  • 1 tablespoon Parsley, chopped
  • 1/2 cup Pecorino cheese, grated

    Bring a large pot of water to a boil

    Meanwhile in a skillet sauté garlic in olive oil for 1 - 2 minutes or until lightly golden in color
  3. 3
    Add zucchini and sauté over medium heat 4 - 5 minutes

    Add peppers and sauté an additional minute then season with salt and pepper
  5. 5
    Cook Spaghetti according to package directions, once pasta is almost cooked reserve 1/2 cup of the cooking water

    Add the cooking water to the sauce and bring to a simmer

    Drain the pasta and sauté with the sauce for 1 minute or until well incorporated
