Ingredients for 8 people
- 1 box Barilla Whole Grain Spaghetti
- 4 tablespoons Extra Virgin Olive Oil
- 1 clove Garlic chopped
- 1 jar Roasted Red Peppers, sliced thin
- 3 Zucchini sliced half moon
- Salt and Pepper to taste
- 1 tablespoon Parsley, chopped
- 1/2 cup Pecorino cheese, grated

Instructions
- Bring a large pot of water to a boil
- Meanwhile in a skillet sauté garlic in olive oil for 1 - 2 minutes or until lightly golden in color
- Add zucchini and sauté over medium heat 4 - 5 minutes
- Add peppers and sauté an additional minute then season with salt and pepper
- Cook Spaghetti according to package directions, once pasta is almost cooked reserve 1/2 cup of the cooking water
- Add the cooking water to the sauce and bring to a simmer
- Drain the pasta and sauté with the sauce for 1 minute or until well incorporated
