BASIL FROM SUSTAINABLE AGRICULTURE
Starting from 2020, our basil is sourced from sustainable agriculture!
This means that each actor of our basil-pesto supply chain is annually audited under the sustainability criteria of the ISCC PLUS Certification Scheme.

The ISCC PLUS Certification Scheme is a voluntary scheme internationally used.
It monitors the sustainable management in the food sectors. According to this certification scheme, sustainability means to guarantee the conservation of biodiversity areas, the preservation of carbon sink, and the adoption of the European Good Agricultural Practices and Traceability through segregation.

MORE SPACE TO BIODIVERSITY
Caring about our basil to us means caring about the fields on which it is grown.
Beyond the certification, we preserve soil health by ensuring continuous crop rotation and biodiversity areas. In this way,fertility is increased and pests reduced.

All our basil farmers adopt a specific crop rotation plan and dedicate 3% of their fields of the Barilla basil supply chain to the cultivation of plants that promote biodiversity, providing shelter to insects essential for the ecosystem.

Knowing that basil farmers often have to work without long-term contracts and are exposed to a high level of uncertainty and risk, we decided to sign multi-year contracts with them. In that way, they can have the certainty to get safe income for the following years and can better plan their costs and investments.

THE CERTIFICATION SCHEME The ISCC PLUS scheme (International Sustainability and Carbon Certification) is a food product version of the ISCC traceability and sustainability certification. It is voluntary and allows us to monitor and certify each actor of our basil supply-chain through the control of its sustainability and traceability rules.

THE CERTIFICATION BODY RINA is an independent certification body that performs annual audits for every actor of our basil-pesto supply chain. These audits are carried out to ensure that all the parameters of the ISCC PLUS certification scheme are fully respected and certified throughout our entire supply chain, from fields to production plant.

OUR SCIENTIFIC PARTNER

Alma Mater Studiorum – Università di Bologna Department of Agricultural and Food Sciences is our partner in this project. They validated the advantages provided by the Carta del Basilico project in terms of Biodiversity and in defining the most efficient program to protect basil from disease.

The Centro di Ricerca e Sperimentazione Agricola di Albenga (CERSAA) is our scientific partner in this project. It is one of the main Italian center of expertise for basil farming. Cersaa has supported us in developing sustainable basil practices and in defining each year the most efficient program to protect basil from diseases.

Our new Pesto Barilla is carefully prepared with the highest quality ingredients and following a unique watchword: delicacy.

GENTLE PREPARATION

To prepare our creamy recipes, we mix all the ingredients until we get an homogeneous emulsion. To preserve the ingredients' original color at its best, we always mix them coldly.

We also created crunchy variants, our Pesto Rustico! For these recipes we cut and sautè our vegetables at a low and controlled temperature to maintain their natural texture and appearance.

Within our plant in Rubbiano, to preserve the natural aroma of the PDO Parmigiano Reggiano we buy it in whole wheels and grate it just before adding it to our Pesto alla Genovese.

A QUICK & MILD HEAT TREATMENT

Quality first! The heat treatment is a technique used to guarantee 100% safe preservation and quality throughout the shelf-life. In our case, Pesto undergoes a quick and delicate one thanks to cutting-edge techniques.

IN AS LITTLE TIME AS POSSIBLE

It’s important for us to prepare ingredients rapidly to avoid stressing them too much. From when ingredients start to be prepared, to when Pesto it’s closed in its jar, it takes less than three hours!

WHAT IS THE ORIGIN OF BARILLA’S BASIL?

Every year, more than 7000 tons of Italian basil enter our production plant ready to join the other ingredients of our Pesto Barilla. Each one of the basil leaf we use in our Pesto Barilla is 100% Italian and comes mainly from suppliers located near to our plants to minimize the time between harvesting and processing.

IS THERE GLUTEN IN YOUR PESTO BARILLA RECIPES?

All our Pesto recipes do NOT contain gluten and are suitable for people intolerant to it.

IS THE TASTE OF PESTO AFFECTED BY THE USE OF BASIL FROM SUSTAINABLE AGRICULTURE?

At Barilla we have very high food safety and quality standards for our products, and we do not accept any compromises on them. Indeed, we have been able to certify our basil from sustainable agriculture preserving the high-quality of our Pesto recipes and their delicious taste!

WHICH PESTO BARILLA ARE PRODUCED WITH ‘BASIL FROM SUSTAINABLE AGRICULTURE’?

All our Pesto Barilla containing basil are produced with ‘basil from sustainable agriculture’, except for Pesto Ricetta Gourmet which is still on its way to get the ISCC PLUS certification [only for Italy, France, Germany and Switzerland]. Though, we decided to claim ‘basil from sustainable agriculture’ on the labels of Pesto alla Genovese, Pesto alla Genovese without garlic, Pesto Con Rucola, Pesto Con Peperoncino and Creamy Genovese [US only].
