How to clean vegetables


Vegetables are a fundamental part of the Mediterranean diet. Here are a couple of tips for how to clean the most common ones.

Ingredients for 4 people

French beans

Part of the cabbage family, broccoli grows in the autumn and winter. Choose broccoli with a solid stem and a full, dark head. The size of the head is not necessarily a sign of quality.

- To trim the broccoli, remove the leaves from the stem and cut into florets beginning at the base of the head.
- Remove any tough parts. If you want you can cut them into slices by selecting the most tender florets and stems, or you can use only the most tender florets.
- Broccoli can be boiled, baked or sautéed in a pan. Remember the finer you slice them, the faster they will cook.
