Béchamel is one of the most versatile and commonly used sauces in European kitchens. It is considered a fundamental preparation anyone who is learning to cook.

Ingredients for 4 people

2 ½ oz butter
2 ½ oz all-purpose flour
4 cups milk fresh whole
salt to taste
freshly ground white pepper to taste
a pinch nutmeg

Preparation

1
Melt the butter in a pot over low heat.

2
Sift the flour and add it to the butter.

3
Mix using a whisk to make a smooth, uniform mixture, known as a roux.

4
Add room temperature milk to the roux, a little at a time, and mix with a whisk. Be careful not to let any lumps form.

5
Once you have added all of the milk, adjust the salt and pepper, add a pinch of nutmeg and bring to a boil.
