With a shape that resembles a seashell, it is easy to see how the locals in the seaside communities of Naples and Genoa got their inspiration in the creation of Medium Shells, or Mezzo Conchiglie. Its graceful, concave shape is covered in ridges.
Both the ridges and generous cup created from the hollowed curve of Medium Shells allow this pasta to capture the flavor of the sauce added to this dish. Its ridges retain sauces beautifully, while their subtly nutty flavor enhances everything from a refined tomato-cream sauce to a traditional chunky meat ragu.
Medium Shells are used widely in American-inspired pasta salads, and in the American favorite macaroni & cheese. Traditional Italian usage might include dairy-based sauces, tomato-based sauces, pasta salads, and meat sauces.
01. Bring 4 - 6 quarts of water to a rolling boil, add salt to taste.
02.Add contents of package to boiling water. Stir gently.
03. Return to a boil. For authentic "al dente" pasta, boil uncovered, stirring occasionally for 8 minutes. For more tender pasta, boil an additional 1 minute.
04. Remove from heat. Drain well.
05. Serve immediately with your favorite Barilla sauce.
