Brutti ma buoni (Almond Cookies)

Ingredients for 4 people

1 1/4 pound almonds
9 egg whites
2 1/2 cups sugar
2 tablespoons butter
Cinnamon to taste
1 vanilla extract

Preparation 20 minutes preparation + 1 hours cooking
1. Blanch the almonds in boiling water and peel

2. On a baking sheet, toast them in a 350° oven for a few minutes and chop finely

3. Whisk the egg whites with sugar to stiff peaks, carefully fold in chopped almonds, a pinch of cinnamon and vanilla sugar (or extract) with a circular motion from the top to the bottom

4. In a saucepan over very low heat, cook mixture, stirring constantly for about half an hour, until dry

5. Butter a baking sheet and spoon small dollops of mixture on it, forming them into a round shape

6. Bake at low heat (260°F) for about 40 minutes

7. Cool completely before eating

8. Brutti ma buoni can be stored in air-tight tin boxes for a relatively long time
