Ingredients for 4 people

2 cups hazelnuts 1 2/3 cups flour 7 tablespoons butter
melted 3/4 cup sugar 4 tablespoons coffee 4 tablespoons milk 2 tablespoons baking powder 2 teaspoons extra virgin olive oil 1 1/2 tablespoons Rum

Preparation 25 minutes preparation + 30 minutes cooking
1. In a preheated 425°F oven, lightly toast shelled hazelnuts on a baking sheet and chop

2. Mix with sugar and flour

3. Combine with 3 beaten eggs, coffee, milk, oil, rum and baking powder

4. Stir in melted butter

5. Pour mixture into a large buttered baking dish with a low rim

6. The cake will be about 3/4-inch thick

7. One way to ensure even flattening of the dough is to wrap it up in foil and lightly press it into the baking dish with your hands until smooth

8. Cook in a preheated 400°F oven for 30 minutes

9. Serve at room temperature sprinkled with confectioner's sugar
