Ingredients for 4 people


1/2 box Barilla Mezzi Rigatoni
1 tablespoon Butter
2 1/2 tablespoons Flour
1 cup Milk 1/4 teaspoon Salt
2 ounces Fresh Porcini Mushrooms Finely Diced (May Substitute Dried Porcini Mushrooms)
1 tablespoon Parmigiano Reggiano Cheese Freshly Grated
1 teaspoon Extra Virgin Olive Oil
1 teaspoon Fresh Italian Parsley Chopped

Bring a pot of water to a full boil. add salt to taste.

add pasta and cook 10 minutes. drain well and place pasta on a large sheet pan.

drizzle with a little olive oil and let cool.

porcini mushroom filling: melt butter in a saucepan over medium heat.

add flour and cook 3 minutes, stirring constantly.

add milk to a separate saucepan and bring milk to a boil. add to butter and flour mixture. simmer 5 minutes, whisking constantly.

sauté diced mushrooms in a skillet with olive oil for 2 minutes. add salt and pepper. refrigerate 20 minutes or until cool.

fill mezzi rigatoni with filling mixture using a pastry bag.

place each rigatoni in a miniature paper liner. garnish pieces with chopped parsley.
