Neapolitan-style Salt Cod

Neapolitan-style Salt Cod

Main course

Ingredients for 4 people

1 ¾ pounds salt cod soaked in cold water changed frequently (for at least 24 hours)
3 cloves of garlic
½ cup extra virgin olive oil
2 cups tomatoes
1 cup black Gaeta olives 1 ounce capers
1 pinch oregano
all-purpose flour to taste
salt and pepper to taste

Preparation 10 minutes preparation + 20 minutes cooking
1. Clean and rinse the cod, dry thoroughly and cut into uniform pieces

2. Heat half the oil to boiling in a pan and fry the cod

3. Salt and pepper to taste

4. When the cod is golden brown, drain it on paper towels and keep it warm

5. In another pan over medium heat, brown the peeled and crushed garlic in the rest of the oil

6. When the garlic is brown, remove it from the pan and add the chopped and seeded tomatoes, capers, olives, oregano and a pinch of salt

7. Cook the sauce for 10 minutes

8. Put the pieces of cod in a baking dish, pour in the sauce, cover the dish and stew in a preheated 400° oven for a few minutes

9. Serve immediately
