Ingredients for 4 people

1/2 cup rice 1/2 cup vanilla sugar (or 1 teaspoon vanilla extract) 2 cups granulated sugar 3 1/2 ounces almonds 3 1/2 ounces candied citron Zest of 1 lemon
grated 6 egg yolks 4 egg whites 4 cups milk 1 3/4 ounces amaretti cookies (almond cookies) 1 pinch salt 1/2 cup bitter almond liqueur Butter for baking dish

Preparation 30 minutes preparation + 30 minutes cooking
1. This is a typical cake from Bologna

2. Soak amaretti cookies in bitter almond liqueur

3. Bring milk to a boil and cook rice over moderate heat

4. Add a pinch of salt and vanilla sugar (or vanilla extract), 1 ½ cups granulated sugar and grated lemon zest

5. Caramelize the remaining sugar and add to the mixture while still warm

6. Set aside to rest for a few hours

7. Add toasted, peeled, chopped almonds, crushed amaretti, candied citron and eggs

8. Combine everything and pour in a buttered baking dish dusted with breadcrumbs

9. Bake in a preheated 350°F oven for about 30 minutes

10. Remove from the oven and cool in the baking dish before unmolding
