What is durum wheat and why is it used to make Barilla pasta?

Durum wheat is a hard wheat that when milled properly produces high quality semolina. It is high quality because semolina has proteins in it that contain elevated quantities of gluten. These attributes, along with the compact structure of semolina, enable Barilla pasta to maintain its cooking consistency, delicious flavour, and al dente texture.
Barilla is the largest purchaser of durum wheat in the world. It uses more than 1,400,000 tonnes of durum wheat to produce its pasta. In order to guarantee the same quality, taste and safety of Barilla pasta around the world, it is not possible to use a single variety of wheat, which is a natural product and subject to changes, sometimes significant, from one season to another. It is necessary to blend the wheat in order to always provide the same level of protein to give pasta the taste and 'al dente' texture that characterizes Barilla pasta all over the world.

How do you judge good quality pasta?

The quality of pasta is very dependent upon the kind of wheat used and the manufacturing process. Barilla uses a blend of the finest quality durum wheat to produce the semolina that makes our pasta. Barilla's innovative milling process and methods assure the high quality and excellent cooking properties of our pasta.

You can judge good quality pasta just by looking at it. Good pasta will have a unique yellow color. Properly grown, stored, milled, and dried, pasta will have very few defects such as black specks, white spots, or cracks. During cooking, the pasta will release only a small amount of starch, will not clump together or form surface stickiness, and it should have good texture and elasticity upon chewing. Visually the pasta should be an amber yellow color, uniform in size and shape, and without grayish or reddish shades. Good quality pasta will have a pleasant taste and aroma, and always cook al dente.

How do I cook pasta perfectly?

Cooking times will vary between difference pasta shapes, so be sure to read the instructions on each box before you start cooking. Follow these simple guidelines below and you'll be well on your way to cooking pasta perfectly.

Fill a large saucepan with water and place over high heat. Be sure to use a big enough saucepan to allow the pasta plenty of room to cook properly. Also allow plenty of water - we recommend 1 litre for every 100g of pasta.
When the water begins to boil, add salt. We recommend 7g per litre of water. After the salt has dissolved and the water is really boiling, add pasta to the water and stir frequently the first two minutes, then occasionally until the end of the cooking process. Follow the cooking time outlined on the box. Before draining the pasta, taste it to see if it is cooked to your liking.
Finish cooking your pasta in the pan with the sauce, so the pasta continues to absorb all the flavour of the sauce as it finishes cooking.

If the pasta is “al dente,” you should feel a slight resistance when you bite into it. There should also be a thin white vein at the centre. If you prefer your pasta a little softer then continue to boil for an additional 1-2 minutes.

Cooking pasta perfectly ‘al dente’ (still slightly firm) allows you to reap the full benefits of pasta’s already strong ability to increase satiety, delaying hunger pangs and providing fuel for working muscles long after meals. Due to the special protein structure of traditional pasta dough, pasta has a low to medium glycemic index (GI) value depending on the cut, which means that the body digests it more slowly than most other carbohydrates. That’s true for pasta that’s made from either soft or hard wheat. To keep the GI value low, cook your pasta to ‘al dente.’
