1/3 cupExtra virgin olive oil

2-3 slicessourdough bread, cubed

To Serve:

Method

Step 1

Preheat the oven to 425ºF.

Step 2

Place garlic, shallots, red peppers, and jalapeño on an aluminum foil lined baking sheet. Drizzle the vegetables with olive oil. Season with salt and pepper. Roast for 25-30 minutes or until tender.

Step 3

For the Parmesan croutons: Spread the bread cubes on a parchment-lined baking sheet. Sprinkle the Parmigiano Reggiano, ground fennel seeds (if using), black pepper and a pinch of salt. Generously drizzle olive oil over the bread cubes and toss to coat. Bake at 425ºF on the lower oven rack for 10-15 minutes, or until golden and crispy.

Step 4

For the sauce: Place the roasted vegetables along with the oil in a blender. Add coconut milk (or cream), dried oregano, smoked paprika, red wine vinegar, salt, and pepper. Blend until smooth and creamy. Set aside.

Step 5

Boil the Barilla Heart Shaped Love Pasta in salted water for 7 minutes until al dente. Reserve 1 cup of pasta water before draining.

Step 6

Toss the pasta with the vegetable sauce, adding reserved pasta water as needed to achieve a creamy and luscious consistency.

Step 7

Serve in pasta bowls and top with parmesan croutons. Garnish with additional parmesan, fresh basil, a drizzle of olive oil, and a sprinkle of chili flakes, to taste.
