This is a twist on our deliciously classic vodka pasta recipe featuring Barilla Heart Shaped Love pasta. We added savory pancetta to the ingredient list for this dish to provide the perfect crunch, but you can easily make it without depending on your tastes and preferences! Cooking Tip: Vodka is used in this sauce, but it is simmered along with the heavy cream, cooking off the alcohol in the dish.

1small yellow onion, diced

2garlic cloves, crushed

2 tbspextra virgin olive oil, divided

3 tbsptomato paste or 3 Roma tomatoes, diced

3/4 cupvodka

3/4 cupHeavy cream

1/4 cupParmigiano Reggiano cheese, grated

1 tbspchopped parsley, for garnish

To tasteSalt and black pepper

Optional4 oz pancetta

Optional1/2 tsp crushed red pepper flakes

Method

Chef's tip

This recipe can also be made using Barilla Penne Rigate pasta or any short pasta shape.

Step 1

Bring a large pot of water to a boil, cook Barilla Love Heart Shaped pasta according to package directions.

Step 2

Meanwhile, in a skillet over medium heat add olive oil and pancetta [if using]; cook until crispy.

Step 3

Add onion, and garlic, season with salt and pepper, sauté until onions are soft, 2-3 minutes.

Step 4

Add vodka to skillet, cook for an additional 2-3 minutes.

Step 5

Add tomatoes or tomato paste and optional chili flakes for a touch of heat; cook for an additional 5-7 minutes.

Step 6

Stir in heavy cream until the sauce is beautifully pink.

Step 7

Drain pasta and add to the sauce. Mix well and top with remaining cheese. Garnish with parsley.
