Ingredients
Serves 4
| 4 | spicy Italian sausages, casings removed |
| 1 | large bunch rapini, finely chopped |
| 2 | cloves garlic, minced |
| 2 | tbsp tomato purée |
| ½ | cup vegetable stock |
| ½ | cup single cream |
| ¼ | cup fresh parsley |
| To taste | chili flakes |
| To taste | salt and black pepper |
| To taste | freshly grated Parmesan |

Method
Step 1
In a large pan over medium heat, cook the sausage meat, breaking it apart until golden and crumbly. Remove from the pan and set aside.
Step 2
In the same pan, sauté the finely chopped rapini for 5 to 8 minutes until tender. Season with salt and pepper.
Step 3
Add the garlic and cook for 1 minute until fragrant. Stir in the tomato purée and cook for 2 to 3 minutes to deepen the flavour.
Step 4
Deglaze the pan with ½ cup vegetable stock, scraping up any browned bits. Stir in cream and chili flakes. Let simmer for 10 to 15 minutes until slightly thickened.
Step 5
Boil the Barilla Jumbo Shells in well salted water according to package directions until perfectly al dente. Reserve ¼ cup of pasta water before draining.
Step 6
Return the sausage to the pan. Add the drained pasta and toss to coat. Add a splash of reserved pasta water to loosen the sauce. Finish with freshly grated Parmesan.
Step 7
Top with extra Parmesan and fresh parsley if desired. Serve immediately.
