There are so many ways to enjoy fresh seafood in the summer, and one of our favourites is this seafood pasta salad with bay scallops and shrimp. Perfectly al dente Barilla Medium Shells pasta completes the oceanic theme, and is an ideal pasta cut to carry the flavours of the lemon vinaigrette and fresh parsley. Just make ahead and serve cold for an easy addition to any brunch or dinner party!
Ingredients
Serves 8
1 box | Barilla Medium Shells/Conchiglie pasta |
1/3 cup | extra virgin olive oil, divided |
2 | fresh lemons, juiced |
2 cloves | garlic |
1/2 lb | bay scallops |
1/2 lb | shrimp, chopped |
3 cups | asparagus, coarsely chopped |
1 pt | grape tomatoes, halved |
2 tbsp | fresh Italian parsley, chopped |
2 tsp | fresh parsley, chopped |

Method
Step 1
Bring a large pot of water to boil, then cook Barilla Medium Shells pasta for 1 minute less than recommended cooking time.
Step 2
Drain and spread on a baking sheet to cool, then toss with 1 tbsp olive oil.
Step 3
In a small bowl, combine 4 tbsp lemon juice, garlic, salt, and pepper.
Step 4
Gradually add the remaining olive oil. Mix well and set aside.
Step 5
Heat 1 tbsp olive oil in a medium skillet. Add asparagus and sauté for 2 minutes.
Step 6
Add seafood to skillet and sauté for 5 minutes or until cooked through; then transfer to a large bowl to cool.
Step 7
Add Barilla Medium Shells pasta, tomatoes, and herbs to cooled seafood mixture, and mix well.
Step 8
Add vinaigrette dressing, mix well and refrigerate 1 hour before serving.
