1 tbsp | extra virgin olive oil |
3 tbsp | basil pesto |
2 tbsp | sun-dried tomato salad dressing |
1 | Granny Smith apple, sliced thin |
4 cups | baby spinach |
1 pt | yellow cherry tomatoes |
1/2 cup | fresh mint leaves |
8 oz (227g) | fresh mozzarella, cubed |
To taste | salt and pepper |

Method
Step 1
Bring a large pot of water to a boil and cook the Barilla Penne pasta according to the directions, but drain 1 minute short of required cooking time.
