Method
Step 1
In a pot of salted boiling water, cook Barilla Penne pasta until al dente. Drain and let cool.
Step 2
In a skillet, cook the pancetta at medium heat for about 3 minutes. Once browned, add chicken cubes, season with salt and pepper, and continue cooking for about 5 minutes or until the chicken is cooked thoroughly. Remove from heat and let cool.
Step 3
In the same skillet, brown baguette bread cubes in 1/4 cup of olive oil while stirring for about 4 minutes. Add more olive oil if needed. For crispier croutons, finish cooking in the oven at 350°F for a few minutes. Once ready, remove from the oven and let cool.
Step 4
Once everything is ready, in a salad bowl, combine pasta with chicken, pancetta, tomatoes, cucumbers, romaine lettuce, croutons and dressing, and mix well.
Step 5
Top with parmesan shavings.
Step 6
In a mortar, purée garlic and capers.
Step 7
While stirring, add Dijon mustard, Worcestershire sauce, lemon juice and olive oil.
Step 8
Transfer in a bowl and mix with the parmesan, mayonnaise and milk. Season with salt and pepper to taste.

Penne Rigate
Penne is one of the most famous Italian pasta shapes and is beloved across Italy. Penne, which means 'pen' in Italian, gets its name from its shape. The tube shape with angled ends was inspired by the quill of an old-style ink pen. Its ridged tubes are perfect for capturing sauces and the rugged texture adds depth to dishes, making it a popular choice for baked pasta dishes and hearty sauces.
